Citrus Dough

  1. Citrus Dough
    Using a stand mixer with the dough hook attachment, mix all the ingredients together except the butter until a rough dough is formed . Add the butter and mix on medium speed for 10 minutes until a smooth elastic dough comes together. The dough should come clean off the sides. Cover the dough and allow it to rise at room temperature for 8-10 hours or until the dough is doubled in size. Once doubled in size, punch down the dough and give it a few kneads. Roll the dough out on a lightly floured surface into a large rectangle (12 inched x 16 inches). Spread the softened butter over the dough and sprinkle the cinnamon sugar on top, spreading it evenly over the butter. Cut the dough into 9 individual strips and roll each strip up. Place the rolls into a greased or parchment lined 9inch pan, 8x8 pan, or cast iron skillet. Allow the rolls to rise for 2 hours or until puffy and toughing each other,(they will not double in size). Bake the rolls at 350°F for 25-30 minutes, or until golden on top. Let the rolls cool for 10-15 minutes before frosting. Can be served immediately.
  2. Cinnamon Sugar Filling
    In a small bowl mix together the cinnamon and brown sugar, set aside until ready to use. Keep the butter separate from the cinnamon sugar mixture.
  3. Citrus Cream Cheese Frosting
    Using an electric mixer cream together the cream cheese, butter and orange zest. Beat in the powdered sugar and 1 Tbsp. of orange juice at a time until you reach a thick and spreadable consistency.
